Here’s a quick Colorado food news update …..
• Homegrown fast-casual giant Chipotle Mexican Grill has upped the sustainable ante by committing to source sour cream from 100 percent pasture-raised cows, and 65 percent of its cheese from the same.
• According to the Associated Press, Smart Balance says it has completed its acquisition of the Denver-based gluten-free food company Udi’s Healthy Foods for $125 million cash. Don’t despair, Udi’s wonderful gluten-heavy bakery and cafes in the metro area are operated separately by the founding Bar-on family.
• Stop by Larkburger – the locally launched sustainable/healthy burger joints – any Saturday and Sunday in July for a $2, 12-ounce chocolate, vanilla and strawberry Boulder Ice Cream milkshakes. I’ve personally, uh, “reviewed” these shakes and can vouch for their coolness. This is what milkshakes are supposed to taste like.
• “I’m so tired of hearing and reading ‘farm-to-table’ in every conversation and article. Hopefully we all use seasonal ingredients, store them properly, mise en place them properly and finish them à la minute properly. … the “farm-to-table” movement is hardly new.” – Thomas Salamunovich, executive chef of Vail’s Larkspur and Larkburger, quoted in Westword.• For a good read about Colorado’s distinctive wineries:
